Minus-plus is the companion of plus-minus. When an identity contains both, the upper signs go together and the lower signs go together, so one line covers two formulas.

Read the top signs for the sum and the bottom signs for the difference.

Questions

When should I use \mp instead of \pm?

Only when the sign is tied to a \pm elsewhere in the same formula and must flip with it. On its own, \pm is what readers expect.
